Such a great and easy breakfast. I usually make 4 or 5 at a time and put in the fridge so I have quick and easy breakfasts ready for the week.

This recipe contains about 31 grams of protein so not only does it really help stabilize blood sugar in the morning it’s also great at keeping you full until your next meal.

Give it a try and see what you think, write your comments below.

STEP 1

Start by gathering your favourite container or mason jar.

STEP 2

Pour 1 cup of liquid into jar. I used 1/2 water and 1/2 unsweetened soy milk, but you could use anything you like here.

STEP 3

Add the rest of your dry ingredients. Rolled oats work best for this recipe. I used Protein Works vegan wonder shake because that’s the one I happen to have in my cupboard right now but I’ve also used others with great results too. Next add your peanut butter powder, you can find this in most health food section at your grocery store. The addition of the soy milk and peanut butter powder really help to bump up the protein content. Next add your chia seeds, definitely don’t skip these since it will help thicken the oats as they sit overnight. Lastly a dash of cinnamon, I love the flavour of cinnamon. It’s also great for digestion!

STEP 4

Place the lid on and shake to combine. Now you can put them in the fridge for at least 4 hours.
