Ingredients
  

  • 2 1/2 cups soy curls
  • 1/3 cup cornstarch
  • 1 carrot sliced into rounds
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1/2 inch ginger minced
  • 1/2 bell pepper diced

For the Teriyaki Sauce:

  • 1/2 cup Bragg's soy sauce
  • 1/2 cup water
  • 1 tsp sesame oil
  • 1 tbsp vinegar
  • 1 tbsp cornstarch
  • 1/4 cup coconut sugar

Additional:

  • Iceberg, romaine or butter lettuce
  • 1 green onion sliced
  • basil

Instructions
 

Prepare Soy Curls:

  • Rehydrate the soy curls according to the package instructions. Soak in hot water for 10 minutes.
  • Drain the soy curls and press out excess water.
  • Toss the soy curls in 1/3 cup of cornstarch until they are well coated.

Make Teriyaki Sauce:

  • In a small bowl, whisk together soy sauce, water, sesame oil, vinegar, cornstarch, and coconut sugar. Ensure that the cornstarch is fully dissolved.

Cook Soy Curls:

  • Heat a large skillet or wok over medium heat.
  • Add a spritz of oil to your pan. Cook the soy curls until they are golden brown and crispy, stirring occasionally. Set aside on a plate.

Cook Vegetables:

  • Using the same skillet add a bit of oil and sauté the diced onion until translucent.
  • Add the minced garlic and ginger, stir for 1-2 minutes until fragrant.
  • Add the sliced carrots and diced bell pepper. Cook until the vegetables are slightly tender but still crisp.

Combine and Sauce:

  • Add the soy curls to the skillet and mix them with the sautéed vegetables in the pan.
  • Pour the teriyaki sauce over the soy curl and vegetable mixture.
  • Stir everything well, ensuring that the soy curls are evenly coated with the teriyaki sauce.
  • Cook for an additional 2-3 minutes, allowing the sauce to thicken.

Assemble Lettuce Wraps:

  • Wash and separate the leaves of butter lettuce to create cups for the filling.
  • Spoon the teriyaki soy curl mixture into each lettuce cup.

Serve:

  • Arrange the lettuce wraps on a platter and serve immediately.

Notes

You can add so many different veggies to this mix and easily switch up the protein to your family's taste. 
Top with green onion, basil, cilantro and even some chow mien noodles to add a nice little crunch!
