Who doesn’t love a good taco bowl?! This one is easy to whip together, even on a weeknight. Also you’ll love how versatile the cheezy sauce and walnut taco filling are for other uses.
The walnut taco filling and cheese sauce can be prepped a couple days ahead. The taco filling also freezes really well.
This taco bowl is one of my all time favourites. I used to make it at lunch pop ups at a health food store in my community. The star ingredients—tomatoes and walnuts—bring more than just taste to the table. Tomatoes, rich in antioxidants and vitamins, contribute to heart health and may boost skin health. Walnuts, packed with healthy fats and nutrients, support immune function and provide sustained energy.
The dressing is to die for, I love it in this bowl, but feel free to drizzle on anything you like, think baked potatoes, actual tacos, dip for veggies or nachos. The Walnut taco “meat”, a savoruy blend of walnuts, sun-dried tomatoes, and spices, is a protein-packed alternative to traditional taco fillings and freezes really well.
Assembling this scrumptious bowl is easy. A handful of greens, cherry tomatoes, avocado, walnut taco meat, and a sprinkle of corn and green onions come together in a brilliant array of colours and textures. Topped with a generous helping of Neal Brother Tortillas giving it a nice crunch. Garnish with fresh herbs like parsley or cilantro, depending on which team you side on!
Dig in and enjoy.
